Oh, I’m REALLY loving the slow cooker thing. Toss a bunch of stuff in there in the morning, wash up the prep area (yeah, who am I kidding), forget about it and then when you remember you have to cook dinner, it’s like it’s already done! Oh slow cooker, where have you been all my life!?
I had some turkey breast in the fridge (fancy that, suddenly the supermarkets here are carrying turkey breast. I mean, you can get it in the butchers most of the time, but pre-packaged was a rarity!). I also seem to have bought a tremendous amount of apples for a girl who doesn’t normally eat fruit. So I decided to experiment a bit. I have always been a fan of meat and fruit: duck and orange, pork and apple, steak with strawberries, bacon wrapped bananas. All right, I made that last one up… but you know, that gets me thinking……
Anyway. On with the easiest recipe -ever-. And if you ever have complained that turkey is a bit dry – this will change your mind.
Sorta Festive Slow Cooker Turkey

Lie 5 slices of bacon down on the bottom of your slow cooker. Layer the turkey breast on top of that.

Pour in your dried cranberries and apple wedges.

Top with the other 5 slices of bacon. Toss a bit of ground pepper on top.

Turn on slow cooker to low for about 5 hours.
By the way - the turkey sorta sticks together and shreds apart (Honest, that sentence makes sense.). So you just sorta pull out bits of it onto your plate. Serves.... well, probably quite a lot! -
I served this with quick stir fried green beans with garlic.
