I should really, like, fill it in.
I’m a british/dutch/american chick who lives in Spain. It’s complicated. I absolutely, no questions asked, LOVE my food much to my detriment. I have been eating ‘low carb’ for near on 12 years now and feel much healthier for it. Recently I discovered the whole Paleo/Primal thing which appeals to me but I still give a wide berth to carbs in general. I can’t help it! I think it’s carbphobia.

Hi, I just came across your recipe for cabbage chips. Sounds great! Will try it also with the regular (white) cabbage, of which I still have 6 heads in my garden.
You mentioned, living in Spain, you can’t get kale. Well, kale is famous in Holland (= boerenkool) and I am about to find myself some seeds for various types of it, to plant in our organic garden, in Spain.
If you’re interested, get in touch with me, I’m sure we’re able to grow it here too.

I did grow some kale once in a pot on my terrace. Sadly, it was just one pot, so it took about 2 or 3 months before it was ready, about 15 minutes in the oven and then about 5 minutes to eat it all! 🙂 Very jealous that you have a garden!
I made this tonight, my 5th day into the Paleo way and it was absolutely SCRUMPTIOUS! I can’t wait until next week to repeat. Thank you so much for posting; and by the way, I enjoy your directional commentary, as well. Absolute joy!
