It’s strange to cook in someone else’s kitchen. But needs must and currently I’m in the UK. Being in the UK is strange. I popped to a local supermarket, Sainsburys Local, and was sadly disappointed at the selection of -fresh- products. I mean, I know it’s just a small supermarket, but come ON, everything was prepackaged, ‘throw in microwave’ meals! There were a few bits and bobs, but spices and raw ingredients were few and far between. So I made a Thai Green Chicken Curry last night and then ventured further afield to shop today.
And I tell you what, it’s a good thing I don’t live in the UK! I went to a GIGANTIC Indian supermarket where I stocked up on coconut oil, coconut flour and discovered loads of awesome things that I resisted purchasing. Darnit. I also found a great health food store where I discovered dehydrated kale chips. Oh. My. God. Those are awesome! Made by InSpiral (which apparently, now in 2020, doesn’t exist…), these things were like a low carb/paleo eater’s idea of heaven. Raw Cacao and Cinnamon flavor and Wasabi Wheatgrass – so tasty! Not cheap (so it’s a good thing I don’t live locally!), but a really tasty treat. Also discovered some ‘raw’ almond crackers by the same company which were similar to something I’ve made, but they actually stuck together better than mine.
Anyway. I also found a local butcher that does zebra, wildebeest and crocodile meat. They didn’t do bison though, which is what I was looking for. So I got some lean ground beef instead. And made these simple ‘burgers’.
Caveman on Tour – Chorizo Beef Burgers
Ingredients
Instructions

Decase the sausages (is that a word?) by cutting the skin and discarding it.

Mix with the ground steak.

Form into burgers. This made 4 big burgers and 3 teeny tiny burgers (for snacks later!)

Cook either on the grill or bbq or skillet or whatever.

Slice the tomato into, well, slices and use them as the 'bun'. Place the burger and then top with whatever you usually top a burger with: egg, cheese, pickle, lettuce....

I served with my favorite celeriac dish and some quick fried green beans.
