Now that my Whole30 is over, I can do some baking. When Coconut Blueberry Crumb Muffins by Wellness Punks was featured on FastPaleo’s recipe of the day, I knew exactly what do to with the blueberries I found at the supermarket.
Holy crap these were tasty. Maybe it’s because they are the first thing I’ve baked since September, but they are totally lush. I think my oven is a bit crap, so I should have cooked them longer. (I couldn’t wait to try them…) But they are moist and just the right amount of sweetness. Also – not sure how big muffin tins are in the US, but the recipe says they make 6, and I ended up with 12.
Honestly, there are still some left…. Wait, maybe I should have just stuck with claiming there were only 6.
