In an effort to simplify meals for the week, I’ve taken to cooking a Big Batch Of Something on a sunday and then dividing it up for servings during the week. I did spicy mince one week, then chilli, then meat sauce. They lend themselves to either eating simply, or adding stuff to make a completely different meal. I like that.
This week I decided to do a meatloaf and PaleoPot posted a recipe for a Triple Hamburger/Cheeseburger Slow Cooked Meatloaf and I decided that was for me.
Of course, as usual, I made a few subs….
I used 2/3rds chicken mince and 1/3 beef mince, added some celery in the mixture, and used garlic powder instead of the mysterious onion powder that I can’t find here. My fillings were spinach, jalapeño peppers, red onion, and tomato. Topped with a quickly mixed homemade ketchup type thing.
