Not So Shepherd’s Pie

I was in the mood for real simple comfort food tonight. And I'd grabbed some love beef mince from the butcher on monday so decided a Cottage Pie was in order. Apparently, in the UK, Cottage Pie is the same as Shepherd's Pie - but with beef. (Shepherd's Pie is with lamb.) But no one really knows that. And besides, this isn't really either as I didn't use potatoes anyway. And I put spinach in it. And mushrooms. Actually - it's not Shepherd's Pie at all. So I can call it whatever I want. Anyway, this uses worcestershire sauce which honestly, isn't strictly paleo. But it's a tablespoon for the entire recipe. Photo sucks. Sorry - but it was delicious, I promise!

Ingredients
  • 500 grams ground beef
  • 1 onion
  • 3 cloves garlic
  • .5 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 1 tablespoon Worchestershire sauce
  • 150 grams chopped mushrooms
  • 100 grams spinach
  • 1 teaspoon thyme
  • 1 head of caulflower
  • 1 tablespoon dried chives
  • 1 pinch black pepper
Instructions
  1. Preheat oven to 200*C.

  2. In a skillet, drop in your olive oil and onions and cook the onions slowly until soft.

  3. While they are cooking, chop up the cauliflower and cook that in a separate pan - either in boiling water or steam it or microwave it or whatever you do to get your cauliflower soft.

  4. Add the beef mince and crushed garlic and cook until the beef is, well, cooked.

  5. Throw in the tomato paste and Worcestershire Sauce and combine. Then throw in your mushrooms. THEN add the spinach and wish that you'd chosen a bigger skillet like I didn't.

  6. Cover and cook slowly until the spinach is more or less wilted down.

  7. While this is happening, you can mash up the cauliflower with a potato smasher. If you really wanted to, you could add butter, but I didn't think it really needed it. I threw in the chives here.

  8. In a glass baking dish, spoon your meat mixture and pat it down so it's quite compact. Then smear the mashed cauliflower on top.

  9. Bake in the oven for about 15 minutes or so. If you REALLY wanted to, you could put some shredded cheese on top and grill it until bubbly. Comfort food!
