Not your average Blueberry Breakfast Muffin

Fruit and meat. Again! I found some blueberries in the fridge last week. Decided instead of making my typical blueberry protein scone – why not make some pork muffins. Nice. And it worked (for me). They look a little weird – which benefitted me, as I didn’t have to share them. Good thing as this recipe only made 6 muffins.

Servings: 6

Ingredients

Instructions

  1. Preheat the oven to 210*C.

  2. In a large bowl, combine all ingredients. Get messy - use your hands - and mix it well. Pop a few blueberries!

  3. Plop them into a muffin tin (makes 6) and bake for 50 minutes. My trick was to take 'em out, pop them upside down on a rack and bake for another 5 minutes just to dry 'em out a bit.

  4. Delicious cold! You could use this recipe for meatballs as well.

  1. I just made these today and found these to be very good. The blueberries were in no way overpowering and gave a little interesting taste. I’ll definitely be making these again. Thanks for an interesting breakfast food.

    1. I’m glad you liked them! I made them again this week as well and absolutely love them. I suppose when I offered them as Blueberry Breakfast Muffins to my boyfriend I should have -warned- him that they were pork. He was a bit surprised. (But he still liked them!)
